Made up a batch of fondant 3weeks ago using an online recipe and taking the temp to 234 f. Stored it wrapped in clingfilm in what I thought was a cool cupboard. However when I took it out today I find it has started to liquify and is now 'pourable'. What have I done wrong. Used the same recipe last year and used it immediately and it was ok.

If you used it immediately last year it might have liquefied on storage if you had kept it.......
At least you can make syrup with it

Maybe the easiest way to make fondant is to pulverise granulated sugar in the food processor and add water
At least you know it's additive and HMF-free
