When honey that you have had for a while either in a bucket or a jar granulates in the bottom and leaves some liquid on the top is it ruined? or if warmed and stirred will it be OK?
 
It is fine, lots of mine did that last year. The best thing to do is to divide it, pour the runny honey off the top and leave the crystallised underneath. Or go down the soft set route. You can warm and stir but it tends to do the same again unless you overheat it.
