Honey & Apple Cake (can only aid weight loss if you don't eat it as part of a calorie controlled diet).
175g honey (must be local from bees that you can trust)
100g milk
75g soft brown sugar
300g rough chopped cooking apple (peeled and cored)
225g Sultanas
350g self raising flour
175g butter
10ml (2 tsp) mixed spice
1 beaten egg
25g demerara sugar (rough estimate) - sprinkling on top

In a large bowl warm honey in microwave then mix until even with sugar and milk
add apples and sultanas, coat evenly, now put to one side
Sieve flour and spice into a second bowl
rub in butter until evenly and finely distributed
add beaten egg and fruit mixture
mix well until all flour is totally wetted out
Transfer mixture to a cake tin (mine is 20cm square)
Sprinkle with a couple of spoonfuls of demerara
Place in an oven at about 160'C for about 1 1/2 hours
until golden brown and risen and a squewer can be removed with no adhering mixture.
Should remain a bit soggy in the middle.
