How long to leave OSR

Hi All

Extracted my first super last week and suspected it was OSR, did the Shake test as it was not capped with no droplets. My question is I have put it into a bucket expecting it to have set by now but it's still runny, how long should I leave it before putting into jars to be sure it does not set rock hard, second year beek with first harvest :party:
 
Three weeks? At 14 degrees, of course. You don't know the water content, by any chance? It is always better to allow OSR to set, or soft set it, than hoping it will be OK.
 
Thanks for the reply not sure of the water content just ordered a refractometer :)
 
If you keep it in a bucket with a tap then you can give yourself a jar at a time for personal consumption while waiting to see if it will set. Best of both worlds as you don't want to end up with a load of solid jars but if it is your first harvest you want to get on and eat it.

Oliver just got my refractometer and the honey is coming in at 19.8%
