Does anyone know the minimum pollen content for honey to be sold as mono floral? i.e Borage/Field Bean/Heather Honey etc.
I have had various figures suggested ranging from 60 to 90%. Even the local trading standards officer wasn't sure. So would appreciate if anyone does know and a reference to source would be very helpful.

I am also very aware that some pollens are under and over represented in Honey, Heather (ling) pollen being one of them.

The Honey Regs say something like "principally or exclusively" from the named source.

If your pollen analysis (adjusted by Sawyer's coefficients) indicates anything like 50% of the nectar being from your named source, I'm sure you'd be safe.

As it is, there's a lot of premium priced "Manuka" honey on the market that doesn't have much, if any, Manuka in it ...
