Uncapped honey , lasts how long ??

Hi All

Have my first frames, super plus 2 of honey awaiting extraction. Have an extractor in order 2 weeks away, couple of frames are uncapped to one side.

Stored inside house covered, warm room, any danger of uncapped honey spoiling ?, seems well enough re moisture content as not running, ( not crystallised. )

Honey is hygroscopic, dependent on storage factors. It can soon start to ferment. Needs to be kept quite cold to be sure. That is why the bees cap it.
