Medlars?

I have just sieved a couple of kilos of medlars to make some cheese. I thought I'd add some spice to half. Has anybody made spiced medlar cheese? I thought maybe some clove and allspice :thanks:
 
If you've done the sieving you've done the worst part haven't you? I never got as far as making the cheese, but did make some thick spiced sauce one year, which I put in jars, and which I thought had a really good flavour. Very good warmed up and with ice cream!

I used mostly allspice, I think, after looking at a recipe on (now can I put in most of an address? Loved this site!) http://www.historicfood.com/
